Boiled Cod Fillets

Place four thick cod fillets into a heavy large saucepan or deep skillet.  Cover with boiling water.  Simmer at medium heat for 10-15 minutes, until fish flakes easily with a fork.

Remove from pan carefully and place on hot serving dish. Use the fish stock for preparing a sauce, for instance a mustard/horseradish sauce.
