Boiled PotatoesWash 12 new potatoes, removing any eyes. Add the potatoes to a pot of boiling water deep enough to cover the potatoes. Continue boiling for 20-30 minutes. (In a pressure cooker: cook for 2-3 minutes at 15 pounds pressure.) Remove the skin after cooking, or serve with the skins on. Suggested serving: Toss with chopped fresh dill* or serve with melted or softened butter to which finely chopped fresh or dill weed has been added. Substitute parsley for dill if desired.
