A great Scandinavian coffee cake, flavored with cardamom and topped with almonds.

Apple Pie, Swedish Style
A crustless apple pie: the batter is baked right in with the chopped apples. Almond flavor brings out the apple tartness or sweetness.  Especially good for autumn apples!

Basic Vanilla Sauce

Cardamom-Almond Custard
Made with honey and cardamom. The chopped whole almonds are cooked with the custard, but then the mixture is strained and the pieces of almond are removed, leaving a smooth texture and strong almond flavor.

Pasha (Finnish Easter Custard)
Uses ground almonds, decorated with candied fruits and almonds.

Scandinavian Oatmeal Cake
Baked in a springform pan, and topped with a sweetened mixture of walnut and coconut, flavored with cinnamon.

Swedish Lemon Cream
A Betty Crocker recipe, a bit like crème fraîche made with gelatin.

Swedish Nut Cake
This recipe uses crushed pineapple, chopped walnuts, and cream cheese among theingredients.

Swedish Rice Pudding
At Christmas-time, bake this with one whole almond to determine who gets a special prize, or, in another tradition, to discover who will be married in the coming year.

Swedish Rusk Applecake with Vanilla Sauce
Crushed rusks with melted butter form the crust for sweetened applesauce to bake in. After baking, the cake is decorated with powdered sugar sifted through a doily or other paper pattern.

Trondheim Soup
More of a dessert soup, this is made with rice, raisins, whipping cream, sugar and cinnamon.
