Danish round pancakes, often with apple filling. These four recipe variations are on the site of Sweet Celebrations, which also sells the special pans that make this cake-like treat easy to make.

Lefse
A recipe for the potato flatcakes which are popular in Sweden and Norway. The page includes links to look at and even buy the tools that the serious lefse-cook will want: a lefse grill, turner, potato ricer, lefse stick, rolling pin. (The special lefse rolling pin is not offered on this site, but is available on the web at other sites.

Plattar (Swedish Pancakes)
Another recipe, this one using sour cream in the batter.

A low-fat adaptation of a Swedish favorite.

Swedish Pancakes with Berry-Cardamom Topping
Instead of traditional lingonberries, these are topped with a mixture of sweetened raspberries and blackberries. Not only can the batter be prepared 8 hours ahead, but I find it cooks up better if you do let the batter rest at least an hour, covered in the refrigerator.
