Vegetables and Potatoes

Recipes on this site:

Boiled Potatoes
Simple directions for preparing a simple dish: boiled new potatoes. Recommended seasoning: dill weed or dill butter.

Sillgratin (Herring Casserole)
A traditional hearty baked dish with herring, potatoes and onions.  Great for the smörgåsbord or for dinner on a cold evening.

Recipes on the Net:

Boiled Danish Squash With Ground Beef
A main dish flavored with ginger and soy sauce.

Bruna Bönor (Brown Beans)
From Wikstrom's Gourmet Foods, a recipe for preparing the brown beans from their dried form. (Wikstrom's also sells and ships brown beans and other Scandinavian foods.)

Danish Red Cabbage
Cooked with vinegar, tart apples, and red currant jelly.

Finnish Summer Soup
A vegetable soup, made with potatoes, onions, baby carrots, green beans, and green peas. (Vegetarian.)

Finnish Turnips
A baked casserole which includes cream, sugar, and cornflakes.

Let's Talk Potatoes
Article on the potato, a staple in Norway since the 1700s, and "Norway's most important vegetable." Includes recipes for boiled/steamed potatoes and for Hasselbakpoteter, or sliced roasted potatoes. (This recipe for Hasselback Potatoes uses Jarlsberg cheese.)

Pickled Cucumbers
Crisp pickles, prepared about 4 hours ahead, marinated with vinegar, sugar, mint, parsley, salt and pepper. (I personally prefer white to black pepper in these pickles.)

Raarakor
A low-fat version of grated, fried potatoes.

Raggmunk - Swedish Potato Pancakes
An adapted recipe for those who are watching their fat intake.

Scalloped Potatoes with Three Cheeses
Uses extra-sharp cheddar, Danish blue cheese, and Parmesan. You might try adapting it to substitute Jarlsberg or Fontina for a more subdued flavor.

Sjömansbiff - Sailor's Stew
Sliced beef, onion and potatoes, baked in a casserole.

Swedish Hasselback Potatoes
A Betty Crocker recipe. Potatoes are sliced almost all the way through, then baked and topped with Parmesan cheese and bread crumbs. Simple and very impressive. Preparation and baking time take almost two hours, so this isn't a great impulse dish for tonight's dinner table.

Swedish Potato, Ham and Pea Salad
Dill dressing, an interesting combination of vegetables and smoked ham make this a good substitute for standard potato salad.

Swedish Red Cabbage
Prepared with vinegar and brown sugar, apples, spices, red wine and currant jelly. A Christmas favorite.
